Ingredients:
* 1 cup cooked quinoa (you can use our white Quinoa or a Quinoa with pineapple and coconut)
* 1 medium cucumber peel and diced
* 1/2 cup chopped fresh mint
* 1 cup Greek yogurt
* Pinch of salt & pepper
Directions:
- In a large bowl combine together cucumber, mint, and yogurt.
- Add the cooked quinoa, salt & pepper.
- Chill and serve.
