Ingredients âïž
1 cup uncooked Quinoa or Tomato and Basil Quinotto
2 cups water
1 cup pesto
1 medium red bell pepper, seeded and diced
1 medium cucumber, seeded and diced
Sea salt or himalayan salt and pepper to taste
Directions đ„Ł
1- In a saucepan add water, salt and bring to a boil. After the water begins to boil add the Quinoa or Quinotto lower heat and cover
2- Let it cook for 15-20 min. Or until the water has evaporated. Gently fluff the quinoa and let it cool.
3- In a medium bowl toss together the cooled Quinoa and pesto, mix them together. Add the bell peppers and cucumbers give another toss.
Season with salt and pepper.
